Samosas 
Dough
- 4 cups flour
- 8 Tbs olive oil
- Water to form soft dough
- In a large mixing bowl combine flour and oil and combine with hands and slowly start to add water until dough starts to form continue to knead until smooth wrap with plastic wrap and let rest In cooler for about an half hour.
Filling
- 4 ea potatoes very small diced boiled in salt water (al dente)
- 2 ea onions diced
- 2 ea Anaheim peppers diced
- 1 tsp chopped garlic
- 1 tsp chopped ginger
- 2 TBS chopped cilantro
- 1 tsp garam Masala spice
